Yesterday, Baby Girl and I were invited to have an early dinner with our nanny and another momma and her chilins. We were supposed to meet everyone at Cracker Barrel at 5:15. We just got a new Cracker Barrel in our small suburbia. It sort of seems like the last place on Earth a Cracker Barrel would choose to set up shop, but I'm not complaining. I love Cracker Barrel...especially their chicken and dumplins.
Is your mouth watering yet? Well, I'm about to make it stop. Baby Girl is getting over a cold and has developed a cough. She coughed and coughed and coughed the entire drive there. As soon as I pulled into the parking lot the projectile vomit started...and it kept coming and coming and coming. Ugh. She choked on her own mucus. Double Ugh. Needless to say, I stripped her down and cleaned her, the car, the toys, etc. I also had to buy an outfit in Cracker Barrel since I had no spare clothes. The outfit is actually kind of cute but it cracks me up that it's from the good ole CB. Do any of you shop for fashionable attire from the country store?

I made Mexican Grilled Steak, Uno Mas Salad, and Black Beans and Rice on Tuesday night. It was delish! Here's the recipe. The steak rub is a bit spicy but you can always make it wimpy by cutting down on the cayenne pepper. The Uno Mas Salad is a recreation from Uno Mas (local Tex Mex restaurant). The mexican rice is from a box and the black beans are from a can....
Mexican Grilled Steak
1/4 tsp garlic powder
1/4 tsp onion powder
1 tsp salt
1/2 tsp pepper
2 tsps chili powder
1/4 tsp cayenne pepper
1 tsp cumin
Mix all ingredients in a bowl and then rub evenly on both sides of steak. We used thin cut bone-in sirloins but any steak will do.
Allow to marinate in the refrigerator for at least 2 hours. I marinated it at lunchtime and cooked it for dinner.
Grill for 10-15 minutes until desired temperature.
Uno Mas Salad
1 tomato sliced thin
2 avocados sliced thin
1 small sweet onion sliced thin
cilantro for garnish
Arrange tomatoes, avocados, and onions on a large plate. Drizzle with olive oil to taste. Season with sea salt. Garnish with cilantro.
