Sunday Gourmet was oh so yummy last night! The hubs saw this recipe as a Pinterest update on Face Book. He asked me to check it out. It's called a Vegetarian Burger, but don't expect to bite into anything similar to a burger. If you don't have burger texture and taste expectations, you will love it! We added bacon to it which totally negates the vegetarian part, but it added even more flavor and crunch. We served corn on the cob as a side.
Easy Sweet Potato Burger
1 medium sweet potato cooked and peeled
2 cans white cannellini beans rinsed and drained
2 Tbsp Tahini
2 tsp agave nectar (or maple syrup)
1 tsp cajun seasoning (I used Spike seasoning)
1/4 cup wheat flour (I used rice flour)
sprinkle of cayenne pepper
salt and pepper to taste
Panko crumbs to coat
Safflower oil for frying
Toppings: Goat Cheese, avocadoes, maple bacon, arugula or lettuce of your choice
Mash sweet potato with cannelini beans in large bowl until incorporated. Add all other ingredients. Continue to add flour if mixture is too wet. Form into patties (thinner than you would make into burgers). Coat patties with Panko crumbs.
Cook in nonstick skillet over medium high heat until both sides are brown. Top and enjoy!
