Chicken Tortilla Soup and Spanish Wine

This is so delicious and easy to make, you'd be brain dead not to make this satisfying
 chicken tortilla soup!


3-4 chicken breasts
1 large can Old El Paso Mild Red Enchilada Sauce
1 can Mexican Corn
1 can Mild Rotel
1 can Pinto or Black Beans
1 can Cream of Chicken Soup
1/4 - 1/2  of jalepeno pepper, diced
Grated Mexican Blend Cheese
Sliced Avocado
Ortega Tortilla Strips


Dump everything into the crock pot and let it cook all day long.  Top with cheese, avocado, cilantro and tortilla strips.  It's even better the next day!  Now, try it and then I'll say "I told you so!"

This crisp, bright Albarino was randomly snatched out of the "Spain" section in Harris Teeter.  Its easy drinking, light acidity was perfect with the soup.  Put this one on your list!  It's a keeper!

If you live in the Charleston area, you need to try out "The Grocery."  It's a new swanky restaurant in the Upper King section  of downtown.  The building has a hip, warehouse feel and the menu has both small plates and larger main courses.  My favorite thing to do is get a ton of appetizers/tapas and share, so this place is right up my alley!  
Speaking of downtown Charleston, there are so many new bars!  We went out for a little bar hopping after dinner and were overwhelmed by our choices!  What's your favorite place to be seen?


  1. I have the craziest husband ever! He will not eat soup, spaghetti, or chili unless it is FREEZING outside! I just may try your soup anyway :-)
