Here's what I do have to share with you today...3 quick, easy appetizers for your upcoming celebrations!
1 package pretzel snaps (square pretzels)
2 packages mini Rolos (that way you don't have to unwrap the individual ones, found at Target)
1 package pecans
Preheat oven to 350. Lay parchment paper on two large baking sheets (I didn't do this step and everything stuck to the pan). Lay pretzels on paper and top with Rolos. Try to make everything in even rows. Cook for 5 minutes. Rolos should be shiny but still hold their shape. Carefully remove pan from oven and gently place pecans on top, pressing slightly so they stick but don't squash the Rolos. Allow to cool completely and store in air-tight container until ready to serve. I kept mine at room temp overnight.

3 Pounds boiled shrimp
2 medium onions, quartered and sliced thinly
1 lemon sliced
14 bay leaves
6 cloves garlic, thinly sliced
1 cup EVOO
1 tsp celery seeds
1 tsp fennel seeds
1 tsp white pepper
1 tsp mustard seeds
1 tsp coriander seeds
4 dried hot chili peppers
1/4 cup white vinegar
1/2 cup lemon juice
Combine all ingredients in large bowl and refrigerate for 24 hrs. Serve in a clear glass container.
Small phyllo shells/cups (buy as many as you need - I used 4 boxes for 60 people)
Large hunk of brie cheese
Pumpkin pie filling (prepare according to pumpkin pie can)
Cranberry Apple Chutney (purchased at Williams Sonoma)
Lay phyllo shells on cookie trays. Spoon small dollops of brie cheese into each shell. Top 1/2 with pumpkin filling and the other 1/2 with cranberry chutney. You can use anything for toppings. I've used blueberry pie filling and apple pie filling. Both were delish. Get creative!!! Sorry for the lack of pics on this one. Trust me, they're pretty, especially the colorful cranberry and blueberry ones!
