Mexican Pizza

I'm a sucker for the Mexican Pizza from Taco Bell.  Here's a recipe to make an even tastier (and certainly healthier) version.

Ingredients:
Natalie's Homemade Taco Seasoning 
1 lb lean ground beef
taco size flour tortillas
olive oil
shredded cheddar cheese
taco sauce
1 can refried beans
tomato, chopped for topping
green onions, chopped for topping
black olives for topping
cilantro, chopped for topping
avocado, sliced for topping
sour cream for topping

Brown ground beef in skillet.  Add taco seasoning.  Drain off excess grease.

In a separate, nonstick skillet, heat olive oil over medium heat and brown tortillas (2 per pizza) until crispy on both sides (about 30 seconds per side).  Set them aside.  Heat beans in same pan.  

Assemble pizzas by spreading beans on one side of a tortilla, put on plate, top with meat, a layer of taco sauce, and another tortilla with beans (bean side down).  Cover with cheddar cheese.  

Place assembled pizzas on cookie sheet and put under broiler for a few minutes, until cheese is just melted.  Watch them, they burn quickly!

Top with tomato, onions, olives, avocado, sour cream, and extra taco sauce!

Cilantro, Lime, Avocado Salad Dressing
1/2 cup cilantro
1 lime, juiced
1/2 avocado, sliced
1 dollop of sour cream
salt and pepper to taste
hot sauce
olive oil

Combine top 4 ingredients in food processor or blender.  Drizzle olive oil while blending until desired consistency (approx. 3/4 cup).  Add hot sauce and salt and pepper to taste.  Serve over arugula.

Pair this delicious meal with delicious Martin Codax Albarino (one of my all-time favorites and super affordable at the grocery store) and enjoy!  Sombreros are optional. 
Baby Girl gave her silly stamp of approval!  The olives and sour cream were her favorites!

I'm going to be MIA tomorrow my friends.  I have to sit like a sloth for 8 hrs in a boring lecture to get continuing education credits for a profession I haven't practiced in 10 yrs.  Trust, me, I'd rather be blogging.  Have a good weekend!

  3. Oooh I want all of it, especially the wine. Will babysit for wine might be my new slogan during funemployment. Wine would be saved post babysitting of course. haha
