Easy Crock Pot Pork Tenderloin
Adapted from one of my favorite dishes from Il Cortile Del Re.
Garlic + herb pork tenderloin
1 large onion
1 box of beef stock
1 box of gourmet wine and herb stock (or something similar found by other stocks)
Caraway Seeds (a few handfuls - you can't really overdo it with this)
Salt and Pepper the tenderloin. Brown the onions until translucent and then the pork tenderloin for a few minutes on all sides. Put all ingredients in the crock pot and cook for 6 hrs on high.
Crispy Roasted Potatoes
Adapted from this recipe on Pinterest.
Bag of baby white potatoes (come in a net bag found by the vegetables)
4 garlic cloves, crushed
Butter sliced into very thin pieces
Salt and Pepper to Taste
Preheat oven to 425 degrees. Spray either a cast iron skillet or deep dark baking pans (I used 2 cake pans) with Pam. Cut all potatoes in half. Place them in the pans cut side down. Fill pan halfway with chicken stock. Distribute crushed garlic, butter pieces, and salt and pepper over potatoes. Bake for about 45 minutes - 1 hour, until tender on the inside and crispy on the outside.
I also made my old standby roasted asparagus with this meal. You simply toss asparagus with olive oil, salt and pepper, and parmesan cheese and roast until crispy.
This meal went perfectly with Pinot Grigio!
p.s. Why do I drink Baby Mama Juice? Because Baby Girl is sick with a fever and respiratory symptoms. Poor sugar. I hate it when my angel is sick. It breaks my heart. She actually asked me to rock her sleep last night. That's never ever ever happened before. :(
