Delicious and Healthy Dip Recipe

I know this may offend the many beet lovers out there, but I've never been a fan of beets.  

When I was a wee young foodie, my dad used to make me eat pickled beets from a can before I could get up from the table.

I will never eat another canned beet for as long as I live.  

A little birdie told me that roasted beets are super tasty.  I've had some roasted beets that I could choke down if there was money involved, but none that I truly liked to eat.  

I've never cooked beets myself.  Why?  Because I don't like them, remember?!  Until now....  

I found this Creamy Beet Dip recipe in Health Magazine and decided to go for it.  This is good stuff people, GOOD STUFF!  It's easy and pretty too!

Creamy Beet Dip

adapted from Health Magazine (I can't find the recipe online)

3-4 large beets, halved
Parchment paper
1 1/2 cups light sour cream
Juice and zest of 2 lemons or limes (I used limes because I was out of lemons)
Pinch or two of ground cardamom
1/2 tsp salt (I used pink salt)
2 small cloves garlic

Heat oven to 425.  
Line cookie sheet with parchment paper and roast beets for 45-60 minutes, turning halfway through.  
Allow to cool, then peel in sink under cool running water.  
In a food processor, combine all ingredients until smooth and creamy.  
Transfer to a bowl and garnish with more zest.  
Serve with chips or crudite and enjoy!  I think lentil chips go perfectly with it.

It was great comic relief!  Here's a recap - a ridiculous suit of armor, a magician/tailor, and a creepy ER doc that reminded me of the serial killer who makes skin suits from "The Silence of the Lambs" all went home.  Of course the previews for the rest of the season have tons of drama including guys who "aren't there for the right reason" and someone who has a girlfriend back home.  Everyone on Twitter seems to love Ben and his son Brody, though I think Ben is surely to disappoint us and is sent home.  What a shocker!  I also think that all the guys look related.  I just can't tell them apart.  Can you?

p.s.  Why do I drink Baby Mama Juice?  Because school's out for summer and I have no idea how I'm going to spend every single day with just the two of us.  We're signed up for Kindermusik Camp mid-June.  That's it folks, the rest is up to me.  Today, I think we're going to Target.  I need to get a little more creative than that if I want to keep this Baby Girl happy.  Any suggestions (other than the pool and beach- I can't do sunscreen every day)?

  3. I love beets can't wait to try this! We don't have any camps til July!! I'm always up for a playdate! We could do aquarium, strawberry picking, see a movie? Ok I'm so glad the Bachelorette started back, there is a void in my life in between seasons! The guy that walked up shirtless made me so uncomfortable. I'm with you I'm sure she's not gonna keep the guy with the kid but his kid was super adorable!

    Today was our first official day of summer and it is pouring:( I think our summer is well planned with camps and pool days (I really hope so)

  5. I've never had a beet before in my life. My sister swears they are good so maybe I will have to try this dip. It can't be that bad in a dip right?

  6. Looks so good! I love beets. I'm so not into this season of the Bachelorette. Not a big fan of hers and I agree, the guys all look the same. Couldn't keep anyone straight except for the weird ones!

  8. Holy beets. Gross!! I would only try your dip if YOU paid me!! Ha!! Kidding! No, really. Beets are "nis-gusting" as the twins say instead of "disgusting!"
