Greek Gourmet

I'm totally worn out from my crazy day yesterday.  

I sold a house by 9:30 am, went to Little Gym with Baby Girl, went to the grocery store, got caught in a rain storm, made a fancy Greek dinner, led a Neighborhood Watch Mtg where only 1 person attended (#fail) and went to a friend's house to watch the Bachelorette.  (p.s.  My pick for her is Brian from Baltimore.  Ben is BAD NEWS!  Don't fall for his crap Des!)

I've been so stressed about selling the rental house that I've developed an eye twitch.  It now travels from eye to eye and down to my nose.  

Lovely.  Freaky.  Ugh.

Today's post is a short, easy, tasty recipe you'll love!



Greek Cod Fish


2 cod fillets

1 large shallot, diced
2 cloves of garlic, diced
salt and pepper
olive oil
fresh dill, chopped
juice of 1/2 lemon
taziki sauce (I used store bought or you can make your own)

Sautee shallot and garlic in olive oil until soft.  Reserve 1/2 of mixture for Greek Orzo Salad Generously salt and pepper the fish.  Add fish to pan and cook on each side until lightly browned (about 4 minutes).  Top with fresh dill, lemon juice and tzaziki sauce!


Greek Orzo Salad


1/2 small box cooked orzo pasta, follow directions on box 

1/2 cup cucumber, diced
1/3 cup kalamata olives, diced
1/2 cup tomatoes, diced
1 small tub feta cheese
2 tbsp fresh dill, chopped
drizzled olive oil
juice of 1/2 lemon
salt and pepper

Combine all ingredients (including warm shallots and garlic from Greek Cod Fish recipe above) and serve!  



So fresh and tasty!  Mr. BMJ said it was restaurant quality.  

We paired our Greek Gourmet dinner with one of our faves, the French Chardonnay Pays d'Oc.

p.s.  Why do I drink Baby Mama Juice?  In addition to my failed attempt at a meeting last night and my sexy new eye twitch, Baby Girl informed me that the bottom of my hair is yellow and the top of my hair is black.  I think that's her 2 1/2 year old way of telling me it's time for a hair appointment!

  2. My eye has been twitching for a couple weeks now...is it contagious? Just kidding. So weird how that'll happen. Don't worry about the hair. My cousin was pointing out my wrinkles last week and asked my Grammy why her arms were so SQUISHY.
