It's All About the Dressing

I'm not a salad lover.  

Whenever I order one at a restaurant, I immediately have entree envy.  

There is one salad, though, that I crave often.

It's a super easy, homemade recipe that I threw together one night and have added it to the regular dinner rotation.  

I tweak it every time with whatever I'm craving, but the dressing always stays the same.

Oh the dressing....  

I could eat it every day.  It tastes amazing on the salad but it's mind-blowing when you dip your tortilla chips in it.  Mmmmmmmmmm.

Chopped Taco Salad

-With chicken-

-With ground beef-

-Without meat- 

1 lb ground beef, turkey, or chicken or leftover shredded beef, turkey, or chicken
2/3 envelope taco seasoning
1 head iceberg lettuce, chopped
1 tomato, diced
1 avocado, diced
1 cup shredded cheddar cheese
1 can pinto beans, rinsed and drained
1 can corn, rinsed and drained
1 handful fresh cilantro, chopped
Tortilla strips for garnish and snacking

Brown the meat and add 1/2 packet taco seasoning and a splash of water so it won't dry out.  If you're using leftover/pre-cooked meat, treat it the same way, just make sure it doesn't dry out.  This tastes delicious without meat too if you're of the vegetarian persuasion.

Combine all ingredients in a bowl and enjoy!  You can add salsa and guacamole if desired!

 Taco Ranch Salad Dressing

1/3 envelope taco seasoning
1 envelope Hidden Valley Buttermilk Ranch Dressing
1 cup buttermilk
1/2 cup plain Greek yogurt
1/4 cup sour cream

Combine all ingredients in a blender and blend until smooth.  I usually prepare the dressing first and refrigerate it while I prepare the salad.  It will thicken up a little in the fridge.  

Dip as many chips in it as you can possibly eat without exploding.  Oh yeah, and save some for your salad too!

For Wine Wednesday, let's talk about what to pair it with.  We drank Martin Codax Albarino, which is a crisp, white, Spanish wine.  A skinny margarita would be fabulous too!  Enjoy!

p.s.  Why do I drink Baby Mama Juice?  Because Baby Girl has been getting up at 6 am lately.  I'm not a morning person.  I can't function before 7 am.  I swear that waking up that early makes me nauseated.  Ugh.  My afternoon power naps have become non-negotiable.


  1. I'm totally making that dressing and dipping whatever I have on hand (What Thins? Fun-size Doritos? Pickles maybe?). Also, totally gave up NOT having wine during the week, so with 6 a.m. wake up calls, I'd be napping (and sipping!) at this point. Glad you can get a rest in later on at least!

  5. I've got to try this. Looks so good! Glad to hear you aren't a salad person either. Id rather drink my lettuce In a smoothie than eat them! I like to eat things that fill me up and salads just don't cut it!

  12. Taco salads are pretty much the only salads I will eat. I am not big on a plate of lettuce I have tried to love it, I just don't.
