Recipe Catch-Up

Sometimes when I show off my tasty dinners on Instagram, I get requests for recipes.  They start piling up and I get way behind in posting them.  My apologies.  

You'll also have to forgive me for the less than quality photos.  I always have hungry, drooling peeps that can't possibly wait for me to get the fancy camera out for a decent picture.  It's always my memory challenged iPhone and Instagram filters that I'm working with.  I'm sure you understand.

Pan Sauteed White Fish


This fish is so easy, healthy, requested by my family at least weekly, and my very own "recipe."  It's so simple, I feel guilty calling it a recipe.  You can get creative and add onions, lemons, rosemary, garlic, almonds,  pecans, or anything else that pairs nicely with fish.  I always serve it with oven roasted veggies and some sort of starch like couscous or quinoa. 

4 white fish filets (trout or cod are our favorites)
salt and pepper
olive oil
1-2 lemons, 1 quartered and 1 sliced (if desired)

If you're going to add sautéed onions, lemons, rosemary, etc to your fish, you will cook these in 2 Tbsp of olive oil first in a non-stick skillet.  Cook them until tender.  If you're adding nuts, cook until just toasted.  They will be light brown.  Remove ingredients from pan and place on a paper towel lined plate.  Make sure you generously salt and pepper the fish filets and cook skin side down first for about 3 minutes.  Salt and pepper the flesh side while cooking.  Flip and cook the flesh side for 3 minutes.  Add ingredients back to pan to warm everything through.  Serve with wedges of lemons to squeeze over the fish.

BLT Salad With Shrimp


I was inspired by Natalie's Chopped BLT Salad and decided to whip one up for myself.  I made up this version with what I thought looked tasty at the grocery store.  That's how I make most of my salads.  Totally on the fly!

Chopped arugula and baby kale 
Grape tomatoes, halved
Chopped bacon or cooked prosciutto cubes
Chopped avocado
Grated cheddar cheese
1 pound of shrimp, peeled and deveined
2 Tbsp dijon mustard
4 Tbsp maple syrup
2 Tbsp lemon juice
salt and pepper to taste

Mix last 4 ingredients together.  Salt and pepper to your desired taste.  You can add more of any ingredient to your desired taste.  I usually don't measure.  I just keep adding things until it tastes right.  

Put shrimp in a medium sized bowl and add a few Tbsp of dressing to marinate shrimp while you are chopping all salad ingredients and cooking the bacon/prosciutto, approximately 20-30 minutes.   After your salad is prepared, saute the marinated shrimp in the bacon grease.  Cook each side a few minutes until pink.  Immediately remove from heat and serve with salad and dressing!

Asparagus Pasta


This recipe was adapted by a recipe I ripped out of Self Magazine.  It's a perfect summer pasta and is chock full of fresh flavors and protein. 

1 bunch asparagus, roughly chopped
1 box whole-wheat pasta, either penne or bow ties
1 can white beans, rinsed and drained
2 tbsp fresh basil or rosemary, chopped 
(I used rosemary because that's what I had on hand)
 1 egg per serving
Olive oil
Salt and pepper to taste

Cook pasta according to directions on box.  Heat 2 Tbsp olive oil in a large, non-stick skillet.  Saute asparagus until tender.  Add beans, pasta, rosemary or basil, salt and pepper.  Cook until everything is hot.  Serve into bowls.  Fry eggs in skillet until over easy.  This will only take a few minutes.  Place eggs on top of pasta in each bowl.  Break the yolk and go to town!  This would also be tasty with grilled shrimp, chicken, or bacon!

p.s.  Why do I drink Baby Mama Juice?  Because we have yet another black tie charity benefit on Friday night.  I'm trying to decide between the dress I'm wearing to my 20 year high school reunion or an older dress I haven't worn in ages.  I don't want to ruin my reunion dress so I'm leaning towards the older dress.  Decisions, decisions.  I need another couture Carmen Marc Valvo dress!!!

  1. I've been dying to try that blt salad. Love that you added shrimp to it. I really want to try that pan seared white fish recipe too. That black tie charity event sounds like fun. How about I take your spot?! ;)
