I can't for the life of me remember where I saw this recipe. I glanced at it, opened up the ingredient list, and thought easy peasy, I get the gist and I'll wing the rest. So, I'm not calling this recipe my own, but I definitely put my own spin on it considering I didn't write anything down!
This recipe is so easy and it's healthy. I used greek yogurt because I don't do mayo. It's so light and refreshing with that substitution. The hardest part is chopping all of the ingredients which can be done during school or nap time. This recipe is going on my regular rotation list for sure!
A little note about the shrimp: I bought peeled and deveined shrimp (because I can't stand to devein those little suckers) and boiled them myself. They only need to boil for 3-4 minutes and then put on ice to cool off. They sell great precooked shrimp in the seafood department. You can get them fresh from the counter or frozen and dethaw them. Whatever is easiest for you!
1-2 pounds of cooked shrimp, chopped (I cooked 2 lbs and it was a ton of food)
1-2 stalks of celery, finely chopped
1 shallot, finely chopped
1/3 cup of plain non-fat greek yogurt (decrease amt if using 1 pound of shrimp)
1 lemon, juiced
Bunch of chives, chopped
Bunch of dill, chopped
Salt and pepper to taste
Combine all ingredients, stir, and serve! Add as much dill and chives as you want. I put in a handful of each. I like it heavy on the dill.
This tastes great as a sandwich on a toasted roll with lettuce and tomato.
We scooped up the rest of the salad with pita chips and decided this would make a divine dip! I know what I'm taking to my next party!
p.s. Why do you drink Baby Mama Juice? Because I think I've found a "natural" sleep remedy for my insomnia. I slept the entire night last night and didn't even get up to go to the bathroom. I don't think that's happened in 6 months. I'll share after a few more nights of trial to make sure it's worth sharing.
