3 Ingredient Pumpkin Spice Muffins

I have a quick little post today since I just realized how crazy jam packed my day is going to be.  I don't even think I'll get in my coveted daily nap.  Ugh.  

I don't want to go another week with silence on the blog front.  

I'm trying to be a master life juggler.  I'll give myself a C for my recent efforts.

This recipe has been all over social media lately and I decided to jump on the bandwagon and try it out.  

I have to be honest that I was seriously doubtful that it was going to turn into something edible.  I fully expected to dump everything in the trash and chalk it up to another Facebook/Pinterest failure.

I was wrong!  I got delicious, moist, pumpkin muffins that even the kids loved!  

Try them out and let me know what you think.  

They couldn't be any easier to make.   



3 Ingredient Pumpkin Spice Muffins

1 box spice cake mix
1 can pumpkin puree (not pumpkin pie mix)
3/4 cup water

Combine all ingredients and stir until completely combined.  Scoop into lined or sprayed muffin pan and bake at 350 degrees for 20-22 minutes.  Take out of oven after a clean toothpick test.  

Enjoy!

p.s.  Why do I drink Baby Mama Juice?  Because I'm going to a fashion show at Hampden Clothing with friends tonight!  I'm excited to get gussied up and see the latest and greatest in Fall fashion.  Come out and join me if you can!  There are cocktails involved, so it's pretty much a no brainer!  ;)

  1. I do a very similar mix (vanilla cake mix and a few dashes of cinnamon), and I love them. Couldn't be easier for a quick fix!

  4. I started making these a couple years ago, they were a WW thing (try them with cool whip! or even cinnamon & sugar on top! oh my yum!) This year when I made them, they got really soggy really fast, so I think they have to stay refrigerated. But still tasted yummy!
