Copycat Avocado Toast

If you've ever been to the Park Cafe in downtown Charleston, then you've most likely fallen madly in love with their avocado toast.  If you haven't tried it yet, then get your buns down there immediately and order it! 

It's a slap your mama, dance on the tables, shout it from the rooftops kind of good.

I've made avocado toast plenty of times before, but it never even comes close to the amazing goodness of the Park Cafe's.  Last time I was there, I had a meeting with my taste buds and the cutie foodie, Christina, and we decided that the key ingredients are lemon juice and quality olive oil.  If anyone has any further insight, please share!

  This is my copycat version when I can't make it downtown to savor the amazing original.

Copycat Park Cafe Avocado Toast


1 Avocado, halved and pitted
Olive Oil (my favorite is California Olive Ranch)
1/2 Lemon
Sea salt
Red pepper flakes
2 Slices of toasted bread

Scoop out avocado flesh into a bowl and mash until smooth.  Squeeze juice of 1/2 lemon and pour in 1-2 Tbsp of olive oil.  Whisk until whipped and slightly fluffy.  You can add more olive oil and lemon juice until desired consistency and flavor is achieved.  Add sea salt to taste.  

Spread on 2 pieces of toasted bread.  Drizzle a little more olive oil and add a few red pepper flakes (be careful, they're hot!).  Enjoy!

p.s.  Why do I drink Baby Mama Juice?  Because we're going to be proud new puppy owners in 8 days!  I'm so excited and crazy nervous.  I know he will be so precious and have amazing puppy breath, but good heavens what have we done?!

  7. Avocado toast is my jam! I make mine almost exactly the same way, but with himalya sea salt. I load mine up with red pepper flakes too.
